Milk Protein Concentrates are highly nutritional
products manufactured from fresh skim milk
with low lactose levels. Milk Protein Concentrates
are well known in the food and health industries and are available from ERIE in both an ultrafiltrated and blended form depending on the end use application of the product.
Our MPC 70 and MPC 80/85 are manufactured from fresh, pasteurized, ultrafiltrated skimmed milk. The product is processed with low heat to maintain a high nutritional value. MPC provides excellent solubility and dispersibility, a very clean flavor profile, and good heat stability. It is suitable for nutritional applications, cheese milk extension, recombined cheese, and processed cheese.

The ultrafiltration process used to produce MPC separates milk components according to their molecular size. During this process, milk passes across a membrane. Some of the lactose, minerals, and water will cross through the membrane and become the permeate stream. Casein and whey proteins, because of their larger molecular size, will not be able to pass through the membrane. The proteins, along with the lactose and minerals that did not go into the permeate stream, will become the retentate stream and be spray dried.
MPC contains micellar casein, whey proteins, and bioactive proteins in the same ratio found in milk. As the protein content of MPC increases, the lactose levels decrease. This high-protein low-lactose ratio makes MPC an excellent ingredient for protein-fortified beverages and foods and low-carbohydrate foods.
ERIE MPC 40 and MPC 56 are available in
both ultrafiltrated and blended varieties and
also with differing heat treatments dependent
on end application needs. Commercially, MPC
is available in a range of protein levels, from 40% to 85%. Instant and specialized types
of MPCs are also available upon request.
