Caseinates

Edible Caseinate is obtained by combining alkalis with separated acid casein. The product is dried and forms a soluble protein ingredient. Common forms of caseinate include sodium caseinate, calcium caseinate, potassium caseinate and sodium/calcium caseinate. Characteristics of the caseinates differ and each has a distinct appearance and functionality.
